Specialty coffee is a qualification commonly used to refer to “gourmet” or “premium” grade coffee. It is the fastest growing area in the industry, known both for its quality and its provenance and traceability back to the farm and, often, individual farmers. This transparency ensures the farmer is paid fairly for his or her product, which, in turn, incentivises the effort put into great coffee.
As this coffee shows unique quality and distinctive flavour that differentiates it from the more commercial coffees, the Specialty Coffee Association of America (SCAA) has created standards to differentiate specialty coffee from the rest. Coffee that scores 80 points or above on a 100-point scale in the SCAA score sheet is graded as “specialty coffee”.
